What are microgreens?

Microgreens are baby plants that we harvest 7-10 days after germination. They are harvested right after the first leaves, called cotyledon, develop but before their true leaves form. They are sometimes mistaken for sprouts, but microgreens are only the tops of the baby vegetable plants. They are full of texture, flavor and more importantly nutrients. According to the USDA, “In general, microgreens contained considerably higher levels of vitamins and carotenoids (about 5 times greater) than their mature plant counterparts.”

How do I use them?

  • Eat them as a yummy snack
  • Make a salad with them
  • Add to you favorite lettuce mix
  • Garnish your favorite dishes
  • Eggs
  • Soups
  • Roast
  • Sandwich topping

Here are the types of Microgreens that we grow:

Sunflower – Nutty flavor, crunchy texture
Arugula – Savory, peppery flavor
Radish – Spicy, radish flavor
Pea – Sweet pea flavor, crunchy texture
